If you're unfamiliar with plantains, here's an introduction: This tropical fruit is often described as a slightly larger cousin to the ever-popular banana (and is often sold in the same vicinity), except plantains have to be cooked before eating. They are also higher in fiber and have a singularly starchy texture that makes them exceptionally good candidates for producing the crunchiest chips. Besides eating on their own, our plantain chips are also a delicious diversion from the usual potato chips as a sidekick to sandwiches. They are also a sturdy, steadfast dipper for guacamole, salsa, and other zesty dips and spreads--cocktails entirely optional.
